The weather has been crazy this winter here in the mountain west. Today it almost felt like spring...but tonight comes in another big storm. So this calls for Warm, Delicious, Comforting SOUP!! Isn't it nice when you have everything on hand and you can make something so incredibly delicious and fast. Well here is THE recipe for you. It's my....
Old World Potato Soup

I even put a piece of parsley in the center as a SHAMROCK for St. Patricks Day for that IRISH Old World Feel (smile)
See the wonderful yummies just floating in this bowl of goodness. It includes potatoes, carrots, onions, bacon, parsley and sour cream and one little secret ingredient that gives it that 'Old World' Flavor. And that is Red Wine Vinegar. Just a touch mind you but it makes all the difference. Yum!

To make it you need:
Frozen Southern Style Hash Brown Potatoes and Frozen Sliced Carrots.
You'll also need:
Dried Parsley Flakes, Chicken Bouillon Granules, Sour Cream, REAL Bacon Bits, Red Wine Vinegar and Dried Chopped Onion
Put all but the Sour Cream & Vinegar in a large heavy pot
Then mix it up with a large spoon
Add just enough water to barely cover the vegetables....about 6 cups.
Turn the heat to high and bring it to a boil.
Cover and lower heat to a simmer. Cook for another 15 minutes or until the vegies are soft. Remove from heat.
With a hand held blender (wand) or a potato masher, mash mixture until well broken up. Leave some larger pieces of carrots.
Add the whole 16 oz. carton of sour cream
Then add 1-2 Tablespoons of Red Wine Vinegar
And mix it all up with a large spoon
Ladle into bowls and garnish each bowl with flat leaf parsley and remaining bacon bits. Serve with Crusty Bread. YUM!!!
Old World Potato Soup
32 ounce package Southern Style Hasbrowns
16 ounce pkg frozen sliced carrots
1/3 cup dehydrated chopped onion
¼ cup dried parsley flakes
3 Tbs. Chicken Bouillon Granules
1 bottle Hormels Real Bacon Bits (not imitation) reserve 1-2 Tbls. for garnish
Water (about 6 cups-not too much though)
16 oz. carton Sour Cream (not fat free..it makes a difference)
1-2 Tbls. Red Wine Vinegar
Flat Leaf Parsley (garnish)
Reserved Bacon Bits (garnish)
Put potatoes, carrots, dehydrated onion, parsley flakes, chicken bouillon granules and bacon bits into a large pot. Put in enough water to just barely cover the vegetables. Bring to a boil and then turn down heat, cover and simmer for about 15 minutes until vegies are done. Remove from heat. With a stick blender OR potato masher.. blend or mash entire mixture until well mixed. Leave a few pieces of vegies slightly broken up. Add sour cream and vinegar. Mix until well blended and there are no more white steaks of sour cream showing. Ladle into bowls and Garnish with flat leaf parsley and reserved bacon bits. Serve.
Note: If I’m serving a large group I put it into a crockpot to keep warm. ENJOY!

Nann, thank you - I have been making cream of potato soup for years, but wanted something a little different.

Oh yum Nann. That's interesting with the vinegar. I've added to a couple things I normally wouldn't have in the past and it does add a nice flavour. You're right. I must try it in potato soup next time. I'm trying your recipe, that's for sure!
